Holi celebrations sans the presence of deep fried sweets is own deep-fried Indian pastry- the gujiya- can fade away your Holi thrills.

The humble gijiya, however, can have its variants depending on the filling that is used to prepare it. The main difference in the recipes of these variants is the ingredients used in preparing the filling.

The Goan nevri is stuffed with coconut and jaggery, setting it apart from its North Indian cousin that is usually stuffed with mawa or khoya and a number of spices and dried fruits. It is the filling that determines the taste and quality of the gujiya. The rest is merely the base.

So this year on Holi 2018, you must try and make your gujiya fillings more innovative.

Here are some quirky gujiya fillings you can try out on Holi 2018:

 Filling with Rabdhi

Rabdi is made by cooking milk till it`s reduced to half and thickened. To make the mixture thicker and even more delicious add khoya to make it more binding and add cardamom or elaichi as well as powdered nuts and dried fruits.

 Gulkand or Rose Petal Filling

Gulkand that is a regular in the mitha paan filling and also team up with gujiyas to make the most delectable filling It will give it an essence full rose flavour and  a beautiful and flavorful twist to your regular gujiya

 Dark Chocolate Filling

Dark chocolate is not a common flavor used in Indian dishes but given a try it can amp up your gujiya game to a great extent. Add a bit of melted baking dark chocolate to your filling to give it a bittersweet twist. You can also use melting white chocolate or chocolate mixed with marshmallows, melt it and combine it with khowa as your gujiya filling Dark chocolate is for the ones who do not want their dessert to be too sweet

Gajar ka Halwa filling

Gajar ka Halwa is unbeatably the most favorite dessert of the winters in North India. Keeping the memories of sweet winter alive, pack your gujiyas with the left over gajar ka halwa filling. It will be like a double treat for the ones with a major sweet tooth

Apple Custard Filling

Give a healthy twist to your gujiya by filling it up with chopped apples along with the usual spices and khoya. You can also you apple pudding and custard as the filling. Just be carefull that it is not too water to run out of the gujiya dough. Apples are loaded nutrients in your preparation. You can replace apples with pineapples or pears as well.

You can experiment with your gujiya filling and mix and match two or more of the above mentioned ingredients. For example, coconut apples or pineapples go very well with dark chocolate as well.
